Gaia Gelato – Authentic Italian Gelato

Gaia Gelato is authentic Italian gelato from the old country.  Cousins Paola and Christina moved to Carlsbad from Rome with a mission: to craft honest food made from the best ingredients. Christina went to the University of Flavors in Italy to learn how to make gelato.  The Italian are very serious about their food, so they send you to a University to learn.

Everything is homemade fresh ingredients.  If they are making strawberry gelato, they will be using the Carlsbad strawberries from the local fields and the famous Carlsbad Mineral Water.  They also use fresh mint leaves for their mint chocolate chip gelato. They do however get their nuts from Italy, because they say they taste different then the ones they find in the U.S.

Gaia Gelato is located in the Village Faire courtyard, the shop stands out for its Italian-style interior and welcoming team behind the counter. A quick glance at the display case and it’s easy to tell this gelato is the real deal, bright colorful layers of gelato.

While enjoying your gelato, you can watch them make gelato through a large window overlooking the kitchen, there every step of production is on display.  Christina makes over 130 different recipes for gelato, so you can get something different every time you visit.

One of my favorites is the honey lavender gelato. It was just the right balance of sweet and floral, the initial taste is one of the honey with a slight aftertaste of lavender.  Gaia Gelato is a delicious way to speed an afternoon.
